UBIQUITOUS GREEN OR NOT SO GREEN PASTA!

This recipe is so simple, suits all green leafy vegetables including spinach or rocket.

Serves 2 people.

  • Boil 150g spaghetti or linguine in salted water

  • 100g green vegetable – I used approximately 5 cavolo nero leaves washed and trimmed. Add to the cooking pasta while you begin making the sauce.

SAUCE

Blitz together in a food processor

  • 45mls olive oil

  • 2 cloves garlic

  • 100g grated cheddar cheese

Add 1 ladle of cooking water along with the cavolo nero leaves carefully removed from the pasta water and blitz smooth. Drain the pasta,  toss in the sauce to coat then serve.

This basic method works well with other freshly cooked vegetables such as carrots, baby courgettes, squash, skinned broad beans and garden peas. Vary the quantities and seasoning to taste.
